MLC staff have been classifying beef carcases throughout GB since the early 1970s. The carcase information provided by the MLC service is widely used as the basis for trading between producers and slaughterers.

Sheep Classification Booklet

An independent service is available to abattoirs to classify their sheep carcases. MLC’s technically trained staff have been classifying sheep carcases since the early 1970’s.

The purpose of this quality standard is to ensure that providers of carcase classification and dressing inspection services for cattle, sheep and pigs in Great Britain operate to a transparent and independent standard agreed by key participants in the supply chain including farmers, processors and their representatives.
