MLC Showcases Carcase Classification at Kepak Bodmin Event with NFU and Local Farmers
Steve Hamilton, Head of Operations at Meat & Livestock Classification (MLC), was recently invited to an evening event at Kepak Bodmin hosted by Site Manager Neil Knight and his team. The event welcomed members of the National Farmers Union (NFU) and local producers for an informative session on the operations at Kepak and the wider classification process.
Attendees were given an overview of Kepak's history and the day-to-day activities at the Bodmin site. Steve Hamilton provided a detailed explanation of Visual Image Analysis (VIA), covering both 2D and 3D systems, the precise measurements captured by the technology, and the high level of accuracy it delivers. Addressing common perceptions around classification being subjective, Steve clarified how experienced classifiers use the 15-point scale and assess carcase lines—concave, straight, and convex—resulting in consistent, objective outcomes, typically with no more than a one-third point variance.
The group visited the chillers, where Steve presented six carcases for detailed discussion. He explained the classification process, how carcases are categorised, and the recognised dressing specifications. He also described how MLC annotates NDTS (Not Dressed to Specification) when required.
Steve highlighted MLC’s unique position as the UK’s only independent classification service provider and noted that Kepak has chosen MLC to carry out impartial verification across its plants, ensuring farmers do not lose money through over trimming of carcases.
The event also featured Darren Pearce, Senior Trainer at Kepak Bodmin, who led a discussion on carcase cuts before demonstrating a hindquarter deboning to a specific customer specification.
