MLC Supports Final AHDB “Right Start, Right Carcase, Right Market” Event at Hailsham Market

On 23rd October 2025, the final event in AHDB’s “Right Start, Right Carcase, Right Market” series took place at Hailsham Market. The session was led by Katrina Thompson, AHDB Engagement Manager for Beef and Lamb, and supported by MLC’s Head of Operations, Steve Hamilton and Operations Manager, Steve Peaty. 

The event brought together local producers for a hands-on and informative day focused on stock selection, carcase classification, and marketing for improved returns.

Rosie Russell, Market Manager at Hailsham, and her daughter Bonnie contributed four of their own cattle for liveweight assessment. Bonnie also showcased her Shorthorn cross, which she hopes will perform well in the upcoming Christmas fatstock shows.

Throughout the day, Steve Peaty and Steve Hamilton discussed MLC’s role within the beef sector, explaining carcase classification and how it relates to the EUROP grid for payment. They highlighted the importance of correct dressing specifications, which directly affect carcase weight and payment accuracy. Carcases not dressed to standard are marked as NDTS (Not Dressed to Specification).

Bonnie’s Shorthorn provided an excellent example for demonstrating correct handling points used to assess conformation and fat class. Attendees also had the opportunity to handle another animal under guidance, gaining practical experience in evaluating stock.

The day featured a range of engaging presentations from AHDB colleagues covering animal health and other key topics. A highlight of the event was a butchery demonstration by Simon, who expertly boned and cut a fore rib while explaining the value of intermuscular fat in achieving superior eating quality. 

The event was well attended and generated excellent discussion, with producers leaving equipped with new knowledge on improving stock selection, dressing accuracy, and marketing for better returns. 

This event marked the conclusion of AHDB’s “Right Start, Right Carcase, Right Market” series for this year, which MLC has been proud to support throughout.
